Homemade, easy, healthy and with only 3 ingredients! 😍 this Ricotta Gnocchi are absolutely delicious! Who want give this a go? We ate them with the Lentil Bolognese sauce (recipe on my website) and was soooo YUMMY! But they are also delicious very simple with sage and butter!
250ml milk of choice (I used oat milk)
300g all purpose flour
1tsp sea salt
In a bowl or in a food processor mix all the ingredients until completely combined.
The mixture will be similar to a smooth “pancake” batter.
Bring a large pot of salted water to the boil.
Use two teaspoons for making the gnocchi: with one of them take a small quantity (approximately 1/2) of the mixture and, with the helps of the other teaspoon, pour it into the boiling water. It is important not to overcrowd the pot.
When the gnocchi come back to the surface, wait a couple of minute and remove carefully with a slotted spoon.
Keep the gnocchi warm while you cook the rest.
Add the sauce of your choice, sprinkle with Parmesan and serve!
