An easy and nutritious pasta recipe made with broccoli and cream cheese!
Ingredients
(makes one kid’s portion)
50-60g uncooked pasta
4-5 broccoli florets, cooked in boiling water or steamed
2 big tablespoons of cream cheese/vegan cream cheese*
1 teaspoon lazy garlic or 1 garlic clove, minced
2 tbsp olive oil
Salt & pepper to taste - optional
* NOTE: for young babies you can use mascarpone instead as it’s naturally lower in sodium
Method
Cook the pasta according to the instructions on the pack.
Heat the olive oil in a medium pan, add the minced garlic and cook until fragrant.
Add the broccoli florets and cook for 3-4 minutes. Remove from the heat and set apart.
Place the cream cheese in a food processor then add the broccoli and a couple of spoonfuls of pasta water. Season with salt and pepper if you wish and pulse until smooth and creamy. You may need to add a dash more water until you reach the consistency you like best.
Coat your cooked pasta with the broccoli sauce.
Serve with some grated Parmesan, if desired.
