Sick and tired of the usual pasta, rice or potatoes? Try this easy and delicious giant couscous recipe! Other vegetables can be added as desired!
Ingredients
(serve 2 adults and 1 toddler)
200-250g giant couscous
2-3 tablespoons of olive oil
1 garlic clove, crushed
1/2 onion, finely chopped
1 large courgette (or 2 small), sliced
50g grated Parmesan
1 tsp salt
Boiling water

Method
Cook the garlic and the chopped onion with the olive oil in a pan over medium high heat until golden.
Add the sliced courgettes and cook for 10 minutes or until softened and lightly browned, stirring occasionally.
Add the giant couscous, the teaspoons of salt and cover everything with the boiling water.
Give everything a good mix, reduce the heat to medium high and cover with a lid. Cook for 10 minutes or until the giant couscous is cooked, stirring occasionally. Adding more water if needed.
Remove from the heat.
Add the grated Parmesan and mix well. Adjust with salt and pepper if desired.
Sprinkle with more grated Parmesan and serve.
