I’m receiving many requests for a banana-free pancakes recipe! After many attempts I finally managed to find the perfect one! 🥞

(makes 6 large pancakes)

  • 40g porridge oats

  • 50g flour of choice (I used spelt flour)

  • 180g milk of choice (I used oat milk)

  • 1 tsp chia seeds

  • 1 tbsp coconut oil (can be substitute with sunflower oil)

  • 1/2 tsp baking powder

  • OPTIONAL 1-2 tbsps maple syrup, agave syrup, cane/coconut sugar or honey (avoid honey for babies under 1 year old)

These vegan pancakes are great just as they are but taste amazing with a little bit of extra flavor. Try adding some:

  • cinnamon powder

  • vanilla extract

  • cocoa powder

  • chocolate chips

  • Blueberries

  1. Place all the ingredients into a food processor and pulse until they form a smooth, thick batter.

  2. Let the mixture sit for 5 minutes so it can thicken up.

  3. Then pour 1-2 tablespoon of batter onto a non sticky skillet (or lightly greased with coconut oil) on a medium heat.

  4. As soon as the pancakes are cooked enough that you can get a pancake flipper underneath without breaking the pancakes, flip and cook the other side until brown.

  5. Top with fruits and your favourite toppings and serve!
