These pea burgers are a great alternative to regular burgers! Packed with succulent peas they are a good source of proteins and are an easy, quick and super tasty meal!
Ingredients
2 tbsp olive oil
300g frozen peas
Half onion, finely chopped
100g ricotta
40g plain flour
40g breadcrumbs, plus extra for coating
Salt & pepper to taste (I’ve added approximately 1 tsp of salt and a pinch of pepper)
Olive oil for cooking
Method
Heat 2 tablespoons of olive oil in a medium pan, add the onion, finely chopped, and gently cook until golden.
Add the frozen peas and cook for another 5-8 minutes until soft.
Remove from the heat.
Transfer the peas in a large bowl and add in the ricotta, flour, breadcrumb, salt and pepper and mix well until the mixture come together and you can make patties. If the mixture is too wet add gradually some breadcrumbs. You can do it in a food processor, blending the mixture just for a few seconds or until the texture your kids like.
Divide the mixture into 8-10 portions and shape into patties.
Coat your patties with some breadcrumbs and place onto a plate.
Heat some olive oil in a pan over and fry the patties over a medium heat until golden and crisp on both sides.
Remove from the pan and put them on a paper towel to drain any excess oil.
