This morning for breakfast we shared this super yummy pancakes platter to celebrate Mother’s Day!😍 This easy pancake recipe makes light and fluffy pancakes that are great for a weekend family breakfast or brunch!
Ingredients
200ml milk of choice
170g self raising flour
1 egg
20ml coconut oil or sunflower oil
2 tablespoons of maple syrup/ agave syrup or honey (avoid honey for babies under 1 year old)

Method
Let the mixture sit for 5 minutes so it can thicken up.
Then pour 1-2 tablespoon of batter onto a non sticky skillet (or lightly greased with coconut oil) on a medium heat.
As soon as the pancakes are cooked enough that you can get a pancake flipper underneath without breaking the pancakes, flip and cook the other side until brown.
Top with fruits and your favourite toppings and serve!
