This Vegan french toast made with wholesome and healthy ingredients are a real favourite! We love to sprinkle them with some shredded coconut, but you can also leave it plain!
(makes 1 slice of bread)
1 ripe banana
1 tbsp chia seeds
3 tbsps plant based milk (I used oat milk)
1 slice bread (I used brown)
1 tsp vanilla extract (optional)
coconut oil for cooking
In a bowl mash the banana then whisk together with chia seeds, milk, cinnamon and vanilla until smooth and completely combined. Leave to sit for 5-10 minutes, until the batter thickens (add a splash of milk if it’s too thick).
Dip the bread into the batter and allow it to soak up the liquid, making sure each sides are well coated. You can cut it in smaller pieces or leave it whole.
Heat some coconut oil in a nonstick pan on high medium heat and cook the bread for a couple of minutes on each side until golden.
Remove from the pan and sprinkle each side with the shredded coconut if desired.
