This is the favourite soup in my house! A simple kid-friendly soup packed with succulent peas and courgettes. This easy and healthy recipe is perfect for both toddler and babies, but I’m sure parents will enjoy it too!
Ingredients
1/4 onion, chopped
3 tbsp olive oil
300g frozen peas
400g courgette, cut in cubes
350ml water
1 tsp salt* *NOTE: avoid or reduce if cooking for a baby
Method
Heat olive oil in a skillet over medium-high heat. Add the chopped onions and cook for a few minutes, until soft and golden.
Add the peas, courgettes, water and salt and bring to a boil.
When the mixture starts to boil, drop the temperature to a simmer and cook for 20 minutes, or until the peas and courgette are soft.
OPTIONAL: Scoop out a small quantity of peas and set aside to add to the top of the soup later.
Remove from the heat and using an immersion blender purée the soup until smooth and well-combined. If you do not have an immersion blender, allow to cool slightly before adding to a blender or food processor to blend.
Add some of the reserved peas to the top.
