Everyone love a creamy pasta! So follow this quick & easy recipe for a winning lunch or dinner! This pasta is made up of just a handful of ingredients and it takes only 15 minutes to make!
(for 1 adult + 1 kid)
120-160g uncooked pasta
1 large courgette, sliced or grated
80-100g cream cheese (I used vegan cream cheese)*
2 tbsp olive oil
Salt & pepper to taste
*NOTE: for your babies you can use mascarpone instead as it’s naturally lower in sodium

Cook the pasta according to the instructions on the pack.
Heat the olive oil in a medium skillet over medium-high heat. Place the courgette and cook for approximately 5 minutes.
Add the cream cheese, a pinch of salt & pepper to taste and mix until well combined. Add a dash of pasta water bit-by-bit until you reach the consistency of sauce you like best.
Remove from the heat and coat your cooked pasta with the zucchini sauce.
Serve with some grated Parmesan, if desired.
