COURGETTE SWEETCORN FRITTERS

❄️ Store in the fridge for up to one 2, or freeze for up to 2 months.

Freeze on a baking tray until frozen. Once frozen transfer to a freezable container/bag and freeze for up to 2 months

Made with 3 only ingredients these fritters are a great easy and quick lunch for your little one! They taste delicious hot or cold so can be a great quick snack too!

Ingredients

  • 1 courgette, grated

  • 80-100g sweetcorn

  • 4 tablespoons self raising flour (you can use plain flour, whole meal flour, chickpea flour, gluten free flour)




Method

  1. In a large bowl mix the grated courgette, sweetcorn and flour. Season with salt and pepper, (if desired).

  2. Heat frying oil in a large skillet over medium high heat. Scoop 1 tablespoon of batter for each fritter and cook until the underside is nicely golden brown (adjusting the temperature if browning too quickly). Flip and cook on the other side.

  3. Serve once cooled.

  4. Enjoy!
