Homemade carrot & oat bars are a fantastic finger foods for babies, kids and adults! These bars are easy to make and so delicious. A really great healthy snack for kids!
Ingredients
180g oats
2 medium carrots (approx 100g), peeled and finely grated
40-50g raisins (roughly chopped for young babies)
70g coconut oil, melted
30g maple syrup, agave syrup or honey (avoid honey for babies under 1 year old)
1 tablespoon vanilla extract
Cinnamon, to taste
1 tablespoon flax seed or chia seeds (optional)
Method
Preheat the oven to 180°C and line a square baking tray.
In a large bowl place the oats, grated carrots, raisins and flaxseed (if used) and mix.
Add the rest of the ingredients and mix well until everything becomes sticky.
Spoon the mixture into the prepared baking tray and smooth over using a spoon, ensure the mixture is evenly spread.
Bake at 180°C for 20-25 minutes, until the edges are lightly golden brown.
Once cooked, remove from the oven and leave to cool completely (cool fully before slicing to prevent the bars from crumbling when slicing).
Slice into bars and serve.
