Looking for some quick breakfast ideas? These breakfast quesadillas are so easy to do and taste amazing! We love them for breakfast, as a snack and as lunch too!
Blueberry Quesadilla
Ingredients
for the Blueberry Quesadilla
1 tortilla (I used mini tortilla)
Cream cheese/or vegan cream cheese (enough to cover the quesadilla surface)
Pinch of cinnamon (optional)
Handful of fresh or frozen blueberries (if using fresh blueberries cut them in half)
OPTIONAL: you can add a sprinkle of brown sugar in it!
Instructions
Heat a nonstick skillet over medium-high heat.
While it’s warming up, spread the cream cheese on the tortilla , sprinkle with cinnamon and top with an even layer of blueberries.
Grease the skillet with some coconut oil or unsalted butter.
Fold the quesadilla in half and grill for about 2 minutes a side until the bread crisps.
Cut into strips.
Enjoy!
Peanut butter Banana Quesadilla
Ingredients
for the Peanut butter Banana Quesadilla
1 tortilla (I used mini tortilla)
Smooth peanut butter (enough to cover the quesadilla surface)
Banana slices (enough to cover half tortilla surface)
Handful of fresh or frozen raspberries or strawberries (optional)
Instructions
Heat a nonstick skillet over medium-high heat.
While it’s warming up, spread the peanut butter on the tortilla , and top with an even layer of banana slices and raspberries/strawberries.
Grease the skillet with some coconut oil or unsalted butter.
Fold the quesadilla in half and grill for about 2 minutes a side until the bread crisps.
Cut into strips.
Enjoy!
