After the 2 ingredients sweet potato wraps, here we go the sweet potato bagels! Crisp on the outside, soft on the inside, these 2 Ingredient Bagels are healthy and super easy to make. Made with a simple combination of just two ingredients, this is about to become your favourite quick bread recipe. Let me show you this easy recipe the whole family will love!
Ingredients:
(for small 8 bagels)
350g cooked sweet potato
350g self raising flour*
Method:
Preheat the oven to 180˚C and place parchment paper on a baking tray.
In a large mixing bowl, smash the cooked sweet potato.
When completely smashed add the flour and stir until combined. Use your hands to form a smooth dough ball.
Separate the sweet potato dough into 8 equal smallest balls.
Shape each portion of dough into a ball. Use your thumbs to make a hole in the center of each ball. Gently pull and stretch until the dough is a uniform sized ring. Repeat with remaining rounds.
Arrange the shaped bagels on the prepared baking tray.
OPTIONAL Brush some butter or milk of your choice (I use oat milk or vegan butter) over the bagels.
OPTIONAL Sprinkle desired toppings over bagels (poppy seeds, sesame seeds etc)
Bake for 20-25 minutes.
Eat warm or let cool and enjoy!
*NOTE: If you don’t have self raising flour at home you can easily make your own mixing together 4 cups of plain flour, 2 tablespoons baking powder and 2 teaspoons of salt!
