STUFFED FRENCH TOAST -EGG FREE- served in bamboo kids plate
This egg free French Toast Sandwich with peanut butter and banana filling is an incredibly delicious breakfast recipe and is so easy to make!


Ingredients

  • 2 slices of brown (or white) bread

  • 1/2 banana, thinly sliced

  • smooth peanut butter (or nut butter of choice)

  • 100ml milk of choice (I used oat milk)

  • 1 teaspoon vanilla extract (optional)

  • 1/2-1 tsp ground cinnamon, quantity to taste

  • coconut oil, (or unsalted butter) for pan

Method

  1. Take the 2 slices of bread and spread an even amount of peanut butter on both.

  2. Place the banana slices on one of the bread slice and make the sandwich pressing down.

  3. In a bowl (large enough to soak the sandwich) whisk together milk, vanilla and cinnamon.

  4. Quickly dip both sides into milk mixture, QUICKLY (2-3 SECOND PER SIDE)!

  5. Pre-heat a non stick pan on medium-high heat. Coat with coconut oil so the bread gets crispy and to prevent toast from sticking.

  6. Place sandwich onto pan and cook for 3-5 minutes until the bottom side is golden brown. Flip sandwich, press on sandwich with your spatula and cook for another 3-5 minutes.

  7. Remove from the heat, cut and serve with your favourite topping and fresh fruit.

  8. Enjoy!
