Today for dinner I really fancy something fresh and tasty. So this pasta was the answer! Freshness from the tomatoes and creamy from the avocado! Just delicious!😋 Plus Hummus and cucumber to complete the meal!


  • 2 medium/small avocado

  • 250 g cherry/baby plum tomatoes

  • 250g pasta

  • 2 tbsps olive oil

  • salt & pepper to taste

  • 1/2 tsp dry oregano and dry parsley


To do this pasta just cut the avocado in chunks, smash a bit of it (for the creamy texture), cut the tomatoes in small pieces and add to the avocado, add olive oil, salt & your favourite seasons (I used dry parsley and oregano) and mix gently.

Cook your favourite pasta, when is ready add pasta to the avocado & tomato sauce.

Mix all together and enjoy!😋
