These healthy blender spinach banana muffins are packed with nutrients and perfect for babies and kids of all ages!
Ingredients
1 ripe banana
120g porridge oat
2 eggs (can be substitute with flax/chia eggs)
1 big tablespoon of smooth peanut butter (or the nut butter you more like)
Handful of fresh baby spinach
1 teaspoon of baking powder
2-3 teaspoon maple syrup/ agave syrup or honey ((avoid honey for babies under 1 year old) - optional
Handful of blueberries (you can use chocolate chips instead too)
Method
Preheat the oven to fan 180°C fan and line a muffin tray with 6 muffin cases (or you can use a mini muffin tray).
Place all the ingredients (apart from the blueberries) into a food processor and pulse until smooth.
Once mixed, add the blueberries (or chocolate chips) and mix with a spoon.
Divide the batter between muffin cases and bake for 20-25 minutes (180°C) until risen and cooked through (if a toothpick inserted into the middle of the muffin does not come out clean, place back in the oven for 5-10 minutes more) - reduce the baking time if you make them in a mini muffin tray.
Once cooked, remove from the oven and leave to cool.
