This super simple tomato sauce is an easy way to get more veggies in. I can’t think of a dish that’s healthier than this! You can adapt the recipe too, adding your favourite vegetables!
1 onion, chopped
1 garlic clove, chopped
70g celery, chopped
1 carrot, finely chopped
1 courgette, chopped
30ml olive oil
1 heaped tsp of salt
ground black pepper to taste
5 leafs of basil
400ml tomato passata or chopped tomatoes
Heat olive oil in a large saucepan
Add the garlic, onion, celery and carrot and cook over a medium heat until softened.
Add the courgette, basil, the chopped tomatoes and salt.
Bring the sauce to the boil, before reducing to a simmer, leave to cook for 15 minutes.
Transfer the sauce to a blender or food processor and pulse until smooth.
Taste and season with salt & black pepper if necessary.
Add the sauce to your pasta and enjoy!
