This super simple tomato sauce is an easy way to get more veggies in. I can’t think of a dish that’s healthier than this! You can adapt the recipe too, adding your favourite vegetables!


  • 1 onion, chopped

  • 1 garlic clove, chopped

  • 70g celery, chopped

  • 1 carrot, finely chopped

  • 1 courgette, chopped

  • 30ml olive oil

  • 1 heaped tsp of salt

  • ground black pepper to taste

  • 5 leafs of basil

  • 400ml tomato passata or chopped tomatoes


  1. Heat olive oil in a large saucepan

  2. Add the garlic, onion, celery and carrot and cook over a medium heat until softened.

  3. Add the courgette, basil, the chopped tomatoes and salt.

  4. Bring the sauce to the boil, before reducing to a simmer, leave to cook for 15 minutes.

  5. Transfer the sauce to a blender or food processor and pulse until smooth.

  6. Taste and season with salt & black pepper if necessary.

  7. Add the sauce to your pasta and enjoy!
