These rolls were made with a 2 ingredient dough that requires no yeast or waiting long hours for the dough to rise! They’re perfectly satiating, easy to make, and the perfect homemade breakfast or snack! 😋
Ingredients:
250g self raising flour
250g greek yogurt or coconut yogurt
3 tbsp coconut or brown sugar
1 cup blueberries fresh or frozen
1 tbsp cinnamon
(OPTIONAL) 50g icing sugar + 1tbs milk or water for the glaze
Method:
Line a baking tray with parchment paper.
In a small bowl add the blueberries with 2 tablespoons of coconut or brown sugar. Mix together and set aside.
In a large bowl combine the flour with yogurt and 1 tablespoon of coconut or brown sugar and mix with your hands until a soft dough forms.
Turn dough out onto a floured work surface and roll dough into a thick rectangle (around 12 inches by 6 inches).
Sprinkle the dough with 1 tablespoon of cinnamon and distribute the blueberry mixture over the top.
Roll dough around filling to form a log; cut log into 12 rolls and place rolls in the prepared baking tray.
For a golden brown color, use a pastry brush and brush the tops and corners of the rolls with milk or butter.
Bake for 15-20 minutes at 180°C, or until golden brown on top. Remove from the oven and let cooling.
(For me and my boyfriend) I like to top the rolls with some sugar glaze! To make it all you need to do is combine the icing sugar with 1 tablespoon of milk and drizzle over the tops of the blueberry rolls.
