I had no time to make pizza tonight so I improvised with a polenta alla pizzaiola! It’s easy to do, is quick and taste grate! I used a ready to eat polenta that I bought in Lidl during the Italian week!
Ingredients
1 pack of ready to heat polenta or leftover polenta
mozzarella and cheddar cheese (or dairy free cheese) - quantity to taste
tomato passata, quantity to taste
oregano, basil, salt & pepper to taste
Method
Preheat oven to 200°C.
Prepare your tomato pizza sauce mixing tomato passata with basil, oregano, salt & pepper, set apart.
Slice the polenta and place it in a oven tray.
Spread it with the tomato pizza sauce.
Sprinkle with cheese and mozzarella.
Bake for 20-25 minutes, until golden and the cheese has melted . Let stand for at least 5 minutes before serving.
