Super easy to make these pizza pastry bites are a treat for the whole family! With their really small size they are perfect for little hands or as an aperitivo snack with friends! I made it very simple as I’m a basic person 😂 but you can make it adding extra filling or perhaps using pesto instead of tomato sauce!
1 sheet of puff pastry
3-4 tbsp shredded mozzarella or cheddar cheese (or dairy free cheese) - quantity to taste
60g tomato passata
oregano, basil, salt & pepper to taste
5-6 fresh basil leaves
Preheat oven to 200°C and line a baking sheet with parchment paper.
Prepare your tomato pizza sauce mixing tomato passata with basil, oregano, salt & pepper, set apart.
Cut the pastry into two equal squares and place one of them onto the baking sheet. Spread it with the tomato pizza sauce leaving 1/2 cm border.
Sprinkle with the shredded cheese over the tomato sauce and top with the fresh basil leaves.
Place the second square of puff pastry over the top and press the edges with a fork to seal.
Use a pizza wheel or knife to cut it into small squares (approximately 1.5-2cm each).
Bake for 20-25 minutes, until puffed and golden. Let stand for at least 5 minutes before serving.
