Do you know that, in a study, cacao tested higher in antioxidants than blueberries and acai berries? And also protect your child’s skin from sun damage an is an excellent source of magnesium and iron? Oh yes ! These are all good reasons to give cocoa to your kids and make this super fluffy and healthy pancakes!
Ingredients:
200ml milk of your choice (I used oat)
50g porridge oat
125g self raising flour (you can use plain and add 1/2 tsp of baking powder)
1 tsp almond butter (any nut butter will be fine)
1 tsp chia seeds
1 tsp coconut oil, plus extra for cooking
1 tbsp maple syrup, honey or agave (optional)
1 tbsp cocoa powder
Method:
Place all the ingredients into a food processor and pulse until they form until form a smooth, thick batter.
Let the mixture sit for 5-10 minutes so it can thicken up.
Warm some coconut oil in a pan over a medium heat. Once warm, spoon in one or two tablespoon of pancake batter into the pan and using a spoon to spread out the mixture.
As soon as the pancakes are cooked enough that you can get a pancake flipper underneath without breaking the pancakes, flip and cook an additional 2-3 minutes.
Repeat until the pancake mixture is finished.
