Ingredients:

  • 200ml milk of your choice (I used oat)

  • 50g porridge oat

  • 125g self raising flour (you can use plain and add 1/2 tsp of baking powder)

  • 1 tsp almond butter (any nut butter will be fine)

  • 1 tsp chia seeds

  • 1 tsp coconut oil, plus extra for cooking

  • 1 tbsp maple syrup, honey or agave (optional)

  • 1 tbsp cocoa powder

Method:

  1. Place all the ingredients into a food processor and pulse until they form until form a smooth, thick batter.

  2. Let the mixture sit for 5-10 minutes so it can thicken up.

  3. Warm some coconut oil in a pan over a medium heat. Once warm, spoon in one or two tablespoon of pancake batter into the pan and using a spoon to spread out the mixture.

  4. As soon as the pancakes are cooked enough that you can get a pancake flipper underneath without breaking the pancakes, flip and cook an additional 2-3 minutes.

  5. Repeat until the pancake mixture is finished.

  6. Enjoy with your favourite toppings!
