There is no better food than a creamy cheesy pasta! This cauliflower creamy pasta is the perfect healthy family dinner, and if you’re not in a rush I highly recommend to put it in the oven for an even more heavenly meal!
200g cauliflower florets
50g Parmesan cheese, grated (can be substitute with 1 tbsp nutritional yeast)
50g cheddar cheese, grated (can be sub with dairy free cheese)
150g pasta of choice
250ml milk of choice (I used oat milk)
30g unsalted butter (I used plant based)
40g all purpose flour
Salt & pepper to taste
Boil the cauliflower florets together with your pasta.
Meanwhile melt the butter in a saucepan, then add the flour and whisk continuously cooking for a few minutes, gradually adding the milk. Whisk until thickened and then remove from the heat. ⠀⠀⠀⠀
Add the grated cheeses and mix well until nicely combined.
Into a food processor add your cheese sauce, the boiled cauliflower, salt & pepper and blend until smooth and creamy. If the sauce is too thick add a ladle of the pasta cooking water.
Mix the sauce with your pasta.
For the bake version: sprinkle the top of your cauliflower cheesy pasta with some grated cheddar/ Parmesan cheese and cook in the oven (grill setting) at 200° for 10 minutes or until the top is golden.
