EASY CAULIFLOWER CHEESY PASTA

There is no better food than a creamy cheesy pasta! This cauliflower creamy pasta is the perfect healthy family dinner, and if you’re not in a rush I highly recommend to put it in the oven for an even more heavenly meal!

Ingredients

(2-3 portions)

  • 200g cauliflower florets

  • 50g Parmesan cheese, grated (can be substitute with 1 tbsp nutritional yeast)

  • 50g cheddar cheese, grated (can be sub with dairy free cheese)

  • 150g pasta of choice

  • 250ml milk of choice (I used oat milk)

  • 30g unsalted butter (I used plant based)

  • 40g all purpose flour

  • Salt & pepper to taste




Method⁣

  1. Boil the cauliflower florets together with your pasta.⁣

  2. Meanwhile melt the butter in a saucepan, then add the flour and whisk continuously cooking for a few minutes, gradually adding the milk. Whisk until thickened and then remove from the heat. ⠀⠀⠀⠀

  3. Add the grated cheeses and mix well until nicely combined.

  4. Into a food processor add your cheese sauce, the boiled cauliflower, salt & pepper and blend until smooth and creamy. If the sauce is too thick add a ladle of the pasta cooking water.

  5. Mix the sauce with your pasta.

  6. Enjoy!

  7. For the bake version: sprinkle the top of your cauliflower cheesy pasta with some grated cheddar/ Parmesan cheese and cook in the oven (grill setting) at 200° for 10 minutes or until the top is golden.
