This delicious puff pastry braid filled with courgettes, cheese and sun-dried tomatoes is a delicious vegetarian main course and is very easy to make!
1 sheet of ready roll puff pastry
4-5 cheese slices (or vegan cheese)
2 courgettes, sliced and grilled
4-5 sun-dried tomatoes (chopped) OR cherry tomatoes (sliced)
Roll out puff pastry over parchment paper.
Place the cheese slices, grilled courgettes and sun-dried tomatoes in a vertical strip down the center of the pastry.
Cut 2cm strips toward the filling diagonally, along the side of the pastry, stopping before filling.
Fold strips diagonally, alternating left and right, over the filling, creating the braid.
Bake in the preheated oven at 220 until puffed up and the top is golden brown, about 12-15 minutes.
