COURGETTE PESTO


This homemade Courgette Pesto is a great way to eat more greens and is so creamy, healthy and tasty! šŸ’š We loved it with linguine pasta and a sprinkle of Parmesan! šŸ˜ If you try it let me know what you think!šŸ„°

Ingredients:

  • 200g courgettes cut in pieces

  • 30g Parmesan cut in pieces

  • 10 fresh basil leaves

  • 20g pistachios or almonds

  • 30g olive oil

  • pinch of salt


Method:

  1. Place the courgettes in a steamer or in a saucepan with boiling water for 10-15 minutes, until they become soft.

  2. When cooked remove from the steamer/saucepan and let them cool a bit.

  3. Place cooled courgette and all the ingredients in a food processor and blend for about 30 seconds, until the pesto is completely smooth.

  4. Bring a pot of water to a boil and cook pasta according to package directions.

  5. Drain pasta and toss with courgettes pesto to thoroughly coat.

  6. Sprinkle with Parmesan and enjoy! šŸ’š
