Baby puffs are a funny and healthy snack perfect for any time of the day! Kids will love them!
1 ripe banana
150g rolled oats
80 milk of choice (I used oat milk)
1 egg, large (or flax egg for Vegan version)
1 tbsp coconut oil
1 tsp cocoa powder
1 tsp baking powder
1 tsp vanilla extract
Preheat oven to 180°and 3 baking sheets with silicone baking mats or parchment paper.
Place oats in a blender and blend and pulse until floured
Add in all the rest of the ingredients and pulse until you have a smooth cream.
Transfer half the mixture to another bowls and stir through the cocoa powder.
Spoon the mixture in a chef pastry bag or plastic zip bag, close and using a scissors cut a corner then squeeze small dots (as big or small as your baby’s taste and age) on the prepared parchment paper.
Repeat until you’ve used up all the mixture . I made 3 cookie sheets full with this recipe.
Bake at 180° for 10 minutes. Reduce to 120° and keep backing for 15 minutes or until the puffs are crisp and the corners are golden (not brown).
Remove from the oven, let cool completely on the baking sheet then transfer in an airtight container. Store for up 1 week.
