These fluffy spinach banana pancakes are a delicious and healthy breakfast for babies and toddlers. Packed with nutrients this pancakes are the perfect meal to get the day started.
Ingredients
Make 10-12 small pancakes
2 small bananas
150g porridge oats (gluten free oat for the gluten free version)
150ml milk of choice (I used oat)
big handful of fresh spinach (approximately 40g)
1 tsp baking powder (optional- it’s to make them fluffy)
1 tsp vanilla (optional)
OPTIONAL: add 1 tbsp of maple syrup or honey to make it sweeter (avoid honey for kids under 1)

Method
Place all the ingredients into a food processor and pulse until they form a smooth, thick batter.
Warm some coconut oil in a pan over a medium heat. Once warm, spoon in one or two tablespoon of pancake batter into the pan and using a spoon to spread out the mixture.
Allow it to cook for about two-tree minutes, before flipping it over and letting the other side cook until lightly brown.
Repeat until the pancake mixture is finished.
