These fluffy spinach banana pancakes are a delicious and healthy breakfast for babies and toddlers. Packed with nutrients this pancakes are the perfect meal to get the day started.

Ingredients

Make 10-12 small pancakes

  • 2 small bananas

  • 150g porridge oats (gluten free oat for the gluten free version)

  • 150ml milk of choice (I used oat)

  • big handful of fresh spinach (approximately 40g)

  • 1 tsp baking powder (optional- it’s to make them fluffy)

Method

  1. Place all the ingredients into a food processor and pulse until they form a smooth, thick batter.

  2. Warm some coconut oil in a pan over a medium heat. Once warm, spoon in one or two tablespoon of pancake batter into the pan and using a spoon to spread out the mixture.

  3. Allow it to cook for about two-tree minutes, before flipping it over and letting the other side cook until lightly brown.

  4. Repeat until the pancake mixture is finished.

  5. Enjoy!
