Easy and delicious these 3 Ingredient Peanut Butter Cookies are so easy to make and it’s the perfect opportunity to get your little one involved in the baking process! These cookies are soft and gooey, they only take a few minutes to put together and kids love them!

Ingredients

(makes approx 20 cookies)

  • 250g smooth peanut butter*

  • 60-70g of coconut sugar (you can use brown sugar or white sugar too)

  • 1 egg

  • OPTIONAL: handful of chocolate chips to the stir into the dough or to press on the top of the cookies!

*NOTE: You can also use other nut butters if you want a peanut free version

Method

  1. Preheat oven to 180Β°C.

  2. Add the peanut butter, coconut sugar and egg to a medium bowl and mix well until combined.

  3. Roll into 1/2 tbsp sized balls and place e on a baking sheet (I used a silicone backing mat).

  4. Slightly press each ball down with a fork.

  5. Bake for 12-15 minutes until cookies become slightly golden brown (I would set the timer for 10 minutes and then check again at 12 minutes and 15 minutes just to be certain - be careful not to over-bake them!).

  6. Remove from oven and let cool on the baking sheet for 5 minutes before transfer to a wire rack. Let them cool completely before serving.

  7. Enjoy!
