Are you looking for a healthy and easy recipe? Rich in vitamins A and C this creamy butternut squash sauce is made with just three ingredients and it’s super delicious!


  • 1 packet of gnocchi (500g) or 150g pasta

  • 300g butternut squash, cut in small cubes

  • 1/2 onion or 1 shallot, finely chopped

  • 2 tbsp olive oil

  • Salt & pepper to taste


  1. In a medium saucepan, heat the olive oil over medium heat. Add the finely chopped onion/ shallot and cook, stirring occasionally, until fragrant and tender, 3 to 5 minutes.

  2. Add the butternut squash cubes and cook for 2-3 minutes until lightly toasted.

  3. Add the half glass of water and cook for about 10 minutes at low-medium heat, stirring occasionally, until the butternut squash is very soft.

  4. Meanwhile cook gnocchi/pasta according to directions.

  5. Place the cooked butternut squash in a food processor or blender. Puree the squash until smooth. Add water if needed until the sauce reaches your desired consistency.

  6. Season with salt & pepper.

  7. Coat your cooked gnocchi/pasta with the butternut squash sauce.

  8. Serve with some grated Parmesan if desired (but highly recommend for mummy and daddy)

  9. Enjoy!
