These cookies are so quick and easy to prepare, are naturally sugar-free, dairy-free, egg-free and gluten-free! The great thing about these cookies is that you know you are giving your kids a delicious but also super healthy treat. They are fantastic for babies, kids of all ages and adults!
Ingredients:
(make 12-13 cookies)
2 medium ripe bananas
1 cup & 2 tbsps shredded coconut
2 tbsps peanut butter (or any nut butter do you like)
(Optional) dark chocolate to decorate
Method:
Preheat oven to 160° and line a baking tray with parchment paper.
In a bowl, mash the bananas with a fork until completely smoothed.
Add the shredded coconut and the peanut butter and mix well until completely combined.
Scoop 1 tablespoon-portions and shape into flatten cookies to promote toasted coconut crispiness, then set on the prepared baking tray and bake in the preheated oven for 20-25 minutes or until golden.
Drizzle with melted chocolate if desired.
