This one - pot recipe is packed full of flavours and takes only 20 minutes - start to finish. But the best part of this recipe is that there is very little washing up! And who cannot resist to a melted mozzarella pasta dish?!
Ingredients
200g pasta
1/2 onion, finely choppe
3 tbsp olive oil
1 garlic clove, finely chopped
500 tomato passata
1 mozzarella (125g) cut in pieces/cubes, or any melting dairy free cheese
250ml water
5-6 basil leaves
1 tsp sea salt
Pinch of sugar
ground black pepper to taste
Method
In a large deep pan heat the olive oil then add the finely chopped onion and garlic and cook for 2-3 minutes until soft and golden.
Add the tomato passata, water, basil leaves, 1 tsp salt, pinch of sugar and the ground pepper and bring to the boil.
When boiling add pasta, stir and cook for 10-15 minutes (minutes depending what pasta are you using) on medium heat stirring occasionally, until the pasta is cooked. (Add more boiling water if needed)
When the pasta is cooked, remove the pan from heat and stir in the mozzarella cubes (or dairy free cheese), give everything a good stir and taste with salt & pepper, if desired.
