This easy mushroom pasta is really tasty, satisfying and comes together in under 20 minutes! I used fresh tagliatelle, which cooks in about 5 minutes. You can use dried tagliatelle instead if you prefer – it will just take a few extra minutes to cook. Or, of course, any other shape of pasta works just fine too! I don’t discriminate!
Ingredients
(for 300g pasta)
30ml olive oil
1 garlic clove, finely chopped
200g champignon mushrooms, sliced
fresh parsley, chopped
pinch of salt
ground black pepper, to taste
Parmesan cheese for serving
300g pasta of your choice

Method
Heat the olive oil in a pan and gently fry the finely chopped garlic for a few minutes. Add the sliced mushrooms, the chopped fresh parsley and a pinch of salt and cook on a medium heat for 10-12 minutes, stirring occasionally until the mushrooms are nicely browned.
Meanwhile bring a large saucepan of salted water to the boil and add the pasta of your choice and cook according to packet instructions.
Drain pasta and transfer to the pan with mushrooms add more olive oil, pepper or salt to taste.
Serve immediately with a garnish of chopped parsley, Parmesan cheese and some freshly cracked black pepper.

Version with Porcini Mushroom
This mushroom pasta is such a winner!
I always make this recipe with champignon mushrooms (see above) as I had difficult to find porcini mushrooms in UK, but last day I finally founded it! 😍 So I tried to add porcini mushrooms to my recipe and the result was heavenly!
