This is a pasta my mum use to cook for me and my sister when we were little, and I still love it. It’s quick to prepare, easy and perfect for babies and toddlers too.
Ingredients
(for 2 adult + 1 kid)
180-200g pasta
1 medium/large courgette, grated, a Julienne or small cubes
3-4 big tbsps of ricotta
2 tbsp olive oil
Method
Cook the pasta according to the instructions on the pack.
Heat the olive oil in a medium skillet over medium-high heat. Place the grated courgette and cook for approximately 5 minutes until softened. Remove from the heat.
Drain your pasta (reserving a little of the water), add the ricotta and mix well. Add the reserved pasta water if needed.
Serve with the cooked courgette on the top and a sprinkle of grated Parmesan if desired.
